We interrupt our regularly scheduled quinoa and legumes...

to bring you the following recipes:

Maki's White Cake  (For Jess)

This is the littlegreenbums Party Cake, used for every celebratory occasion that crosses our collective path.  It was given to me by my friend Maki more years ago than I can remember, and has never fails to delight.


2 1/4 cups cake flour
1 1/2 cups sugar
3/4 cups Earth Balance shortening
3/4 cups mil (I use rice milk)
2 1/2 tsp. baking powder
1 t. salt
1 tsp. vanilla
3 eggs

Beat for 2 minutes on high.
Pour into a greased and floured pan and bake at 375  f for 25 minutes.  Let cool and frost with buttercream.

Doughless Knishes: (for M. Bloom)


While this isn't the knish recipe we used at my shul's cafe, it's our  gang's current  favorite.

4 onions, sliced
1/2 cup oil
8 potatoes (about 4 to 4 1/2 lbs), diced, cooked, and mashed
4 large eggs
2-1/2 cups flour
1-1/2 sticks margarine, softened ( I use Earth's Balance)
salt
freshly ground pepper
1 egg, well-beaten for egg wash
sesame seeds


Preheat oven to 375° F. Sautee the onions in oil until golden. In a large bowl, thoroughly combine all the ingredients except sesame seeds. Put the mixture into a 9x13-inch pan. Brush with egg wash and sprinkle with seeds on top. Bake for 1 hour. Serves 8 or more.

  2. Cakes that you can make in one go and in one bowl have got to be the best kind! Recipes that involve several bowls and sifting don't tend to be made more than once in this house! Thanks for the recipes.
    p.s. Thanks for the applique puppy love. I just got Cute Stuff by Aranzi Aronzo and it's full of adorable but simple applique patterns.

  6. Aha -- here's the recipe! I have a bookmark for you on my homepage & check your blog when it indicates you have a new post. Silly Yahoo homepage-bookmark isn't showing me that you've posted new posts so I haven't been to your blog in a few days...

    Okay... so, is this a sort of knish casserole (i.e. you make a big casserole and scoop out servings?) It reminds me a little of my sister-in-laws potato kugel, except that for the kugel, the potatoes are shredded/grated. It's basically a gigantic, delicious, oven-baked latke but I've never made it because it's a lot of work (I don't own a Cuisinart and do everything by hand...)
